Artichoke & Lime dip

The beauty of dips and spreads is that they can be done in all forms and with any ingredients. Besides hummus and baba ganoush, there are also some unusual combinations that are worth trying.
If you love artichokes, this quick and simple recipe will transform them into a delicious snack in under 5 minutes. Indeed, unlike hummus, for this dip, you can use tinned artichoke hearts and tinned cannellini beans straight out of the can.
Here’s how to make it.
Ingredients
- 1 can of artichokes hearts
- 4 tablespoons tinned cannellini beans in water
- 1 garlic clove
- 2 tablespoons olive oil
- 2 tablespoons tahini paste
- Pinch of pepper
- Pinch of parsley
- Pinch of garlic salt
- 1 teaspoon peanut butter
- Juice of half a lime
Preparation
Put aside one of the artichoke hearts: you will use it to decorate the dip later. Drain the artichokes, and put them in the blender’s cup, together with all the other ingredients.
Blend until the ingredients are smooth and soft. Transfer to the serving bowl (or ramekins). Split the spare artichoke heart and put it on top of the dip. Sprinkle with a bit more pepper and parsley. Drizzle with a little olive oil and serve.
Enjoy with crackers, breadsticks or thins.
