Bircher Müesli

Müsli is a breakfast meal made of rolled oats soaked overnight in fruit juice and/or vegetable milk, yogurt, fresh fruit, dried fruits, and nuts. It was developed by Swiss physician Maximilian Bircher-Benner for patients in his hospital in 1900.
The original Bircher-Benner recipe consists of the following ingredients:
- Apples
- Nuts
- Rolled oats, soaked for at least 12 hours
- Lemon juice from half a lemon
- Cream and honey or sweetened condensed milk.
Modern granola is very similar to Bircher müesli, as it already contains a combination of oats, nuts, seeds and dehydrated fruit.
This Bircher Müsli follows the original recipe, just adding vegan ingredients. It is very delicious!
Ingredients
- 3 tablespoons rolled oats
- 1/4 cup almond milk
- 1/4 cup apple juice
- 1/2 Granny Smith apple
- 2 tablespoons coconut shreds
- 1/2 cup unsweetened natural coconut yogurt
- A handful of frozen raspberries
- Pinch of sunflower or pumpkin seeds
- A few almonds
- Juice of 1/2 lime
- 1 tablespoon maple syrup
Preparation
Pour the rolled oats in a bowl, add the apple juice and the almond milk. Stir well and put into the fridge for at least 2 hours to cool. When the oats have absorbed most of the liquid, you can start topping your bowl with the rest of the ingredients.
Top the oats with a layer of coconut yogurt, then sprinkle the coconut shreds on top of it. Sprinkle with the seeds, almonds, and frozen berries.
Rinse and halve the apple. Cut it into thin slices and decorate your bowl as desired. Drizzle the apple with lime juice to prevent it from browning. Top with a little maple syrup and put back into the fridge for another 6-8 hours (ideally, overnight).
