Cauliflower rice is a healthy alternative to rice when it comes to accompanying dishes that are already rich on their own. The process to make it is a little messy but straightforward: all you have to do is to chop the florets off the head and toss them into the food processor. A few pulses are enough to obtain small grains that resemble rice or couscous.
Then, you can cook it as you would with rice: you can boil it, steam it or even stir-fry it in a skillet.
- 1 cauliflower head
Rinse the cauliflower and take off the leaves. Chop the florets off and toss them into the food processor. Grate the cauliflower until you obtain grains of the desired size. Transfer them to a bowl covered in kitchen paper and press to squeeze out the moisture.
You cauliflower rice is now ready to be cooked. Here, I cooked it in a large skillet with a little olive oil.
Serve as you would serve regular rice.
