Whenever neither Simona nor I feel like cooking, the choice for lunch or dinner goes towards sandwiches. We love them of any kind, but club sandwiches are my specialty. I can go quick and easy or very fancy, with lots of layers with different flavors. To make it classy, halve the sandwich so it’s easy to handle and it won’t spill.
When we want a chilled dinner, I give way to my creativity and accompany the sandwich with a little Grand Marnier. Try that, it’s incredibly satisfying!
For these sandwiches, I used olive ciabattas but you can use the type of bread you like the most.
- 1 olive ciabatta
- 1 lettuce leave
- 4 slices of tomato
- 4 slices vegan pepperoni
- 1 slice vegan bologna
- 4 slices fresh cucumber
- Non-dairy butter
- Vegan mayonnaise
- A bit of Grand Marnier (complimentary)
Halve the ciabatta and warm it in the toaster. Butter both halves. Layer the ingredients specularly, brushing a bit of vegan mayonnaise on the tomatoes and lettuce. Cover with the top of the bread and halve the sandwich.
Take a sip of Grand Marnier and enjoy the party in your mouth!
