Cranberry Energy Bars

Feel low in energy? Here’s a delicious energy bar that you can make at home in a few minutes. No baking or cooking involved! All you have to do is to mix the ingredients together, mold your bars and freeze them.
Here, I have used a star-shaped cookie cutter. If you don’t have one, you can just cake the entire mix into your baking tray and cut them with a knife into bars after freezing.
Ingredients
- 1 cup rolled oats
- 1/2 cup puffed rice
- 1 tablespoon of unsalted raw cashews
- 1 tablespoon of unsalted pistachios
- 1 tablespoon chia seeds
- 3 tablespoons unsweetened coconut shreds
- 1/4 cup dried cranberries
- 8 dried prunes
- 3 tablespoons crunchy peanut butter
- 3 tablespoons maple syrup
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
Preparation
Crush the cashews and pistachios with the back of a spoon. Mix the oats, puffed rice, crushed nuts, chia seeds and coconut shreds in a large bowl.
Pit the prunes. Mix the cranberries and prunes with a food processor, until you obtain a thick and sticky paste. Mix with the oats. Transfer again in the food processor cup and mix until you obtain an even mix.
Mix the peanut butter with maple syrup, coconut oil, and vanilla extract. Mix with the oats until you obtain a sticky paste. Transfer the paste to a baking tray covered in tin foil, by pressing it inside a mold or a cookie cutter.
Top with a few coconut shreds and dried cranberries. Put in the freezer for a couple of hours before eating. Keep in the freezer for future use.
