General Tso’s cauliflower
Oh, this recipe! As much as we don’t love fast food, this homemade General Tso’s cauliflower tastes incredible and would fool any meat eater. Cauliflower florets are very similar in shape and texture to chicken nuggets, except for the fact that they’re healthier and lighter. You will take seconds and thirds. However, if there are any leftovers, be advised that they are delicious as well.
Here’s how to prepare it.
- ½ cup all-purpose flour
- ⅓ cup cornstarch
- 2 teaspoons egg substitute
- 1 teaspoon garlic salt
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon maple syrup
- ½ cup olive oil (or sesame seed oil)
- 1 head cauliflower, cut into bite-size florets
- Pinch of sesame seed
- Sweet chili sauce
- 1 fresh spring onion
- Fresh parsley
Rinse the cauliflower head and chop it into bite-sized florets. Rinse the spring onion and slice thinly. Mix the flour, cornstarch, egg substitute and salt in a large bowl. In a graded glass, mix the soy sauce, lime juice, and maple syrup. Set aside. Pour 1 cup warm water into the bowl and whisk until you obtain a smooth batter. Stir in the mix from the graded glass. If the batter is too thick, add a little water.
Heat the olive oil in a large skillet, heat to high. Toss the cauliflower florets into the batter and turn until evenly coated. Turn the heat to medium and transfer the cauliflower florets to the skillet. Turn them until they are golden brown. Transfer to the serving plate, add some sweet-chili sauce and sprinkle with sesame seeds. Then start the process all over with another batch of florets.
Sprinkle with fresh green onion and top with a little fresh parsley.
