Grapefruit Salad

Love grapefruit? Here’s a quick and easy salad from Thailand that you can make on the go. Refined and rich of vitamins, this salad is perfect for Fall and Winter days when you want to boost up your energy with some citrus fruits.
In place of the orange, you can also use pink grapefruit in combination with yellow grapefruit. The result will be extremely delicious!
Ingredients
- 1 can palm hearts
- 1 yellow grapefruit
- 1 orange (or pink grapefruit)
- Juice of 1 lime
- Juice of 1 lemon
- ¼ red onion
- 1 garlic clove
- 1 cup wombok (Chinese cabbage)
- 1 tablespoon minced parsley
- 2 tablespoons peanuts
- 1 tablespoon maple syrup
- Pinch of Chipotle
- Salt and pepper, to taste
Preparation
Thinly slice the wombok. Peel the grapefruit and the orange, eliminating the membrane in between the slices. Peel and slice the onion. Slice the palm hearts into rounds. Peel the garlic and thinly slice it. Transfer everything to a mixing bowl.
Drizzle with lemon and lime juice, then add the maple syrup. Season with minced parsley, Chipotle, salt and pepper. Add the peanuts and mix well. Serve cold.
