Green Dragon Tail Soup
We never stop enjoying soups. This soup is not only cute to see, but also tasty, healthy and refreshing. You can vary the ingredients to your taste, provided they are green.
Here, I have used zucchini, broccoli, and spinach. The seasoning is also green: basil, parsley, and lime. Instead of faux shrimps, you can also use faux chicken.
Decorate with soy cream for a nice dragon tail effect.
- 1 tablespoon coconut oil
- 2 medium-sized zucchini
- 1 small broccoli head
- 100 gr baby spinach leaves
- 1-in ginger piece
- 2 garlic cloves
- Juice of 1 lime, plus 2 lime slices
- 2 cups faux shrimps
- Pinch of black pepper
- 1 teaspoon vegetable powder
- Pinch of parsley
- Pinch of basil
- Soy cream, to decorate
Rinse and roughly chop the zucchini and the broccoli head. Peel and thinly slice the garlic cloves and ginger. Heat some coconut oil in a large skillet and add the chopped greens plus the ginger, garlic, and spinach. Add three cups of water and the vegetable powder. Cover with a lid and continue to cook, heat to medium, until all the veggies are soft.
While the vegetables are cooking, take the faux shrimps out of the freezer. Process the vegetables with an immersion mixer, until you obtain a smooth cream. Add the shrimps, the spices, and the lime juice. Stir well and continue to cook for a few more minutes.
Transfer the soup to the serving bowls. Drop some thick soy sauce in the soup, and decorate with a toothpick. Add a slice of fresh lime and serve.
