Green Papaya Salad

Green papaya salad is very popular in Thailand, where it is served as an entry dish or on the side together with grilled meat. Indeed, green papaya has a fresh and sweet taste that goes very well with salty food.
This salad is also easy and quick to prepare, with only two main ingredients: papaya and green beans. It is light, and very pleasant to eat, especially when chilled.
Ingredients
- 1 green papaya
- Juice of one lemon
- 150 g green beans
- Pinch of rock salt
- Pinch of minced parsley
- 2 tablespoons peanuts
- 1 tablespoon maple syrup
- Pinch of Cajun
- A few drops of Tabasco
- 2 tablespoons soy sauce
Preparation
Halve the green beans and toss them into a sauce pot with boiling water and a pinch of rock salt. Cook for about 10-15 minutes, until fork tender. Drain and set aside to cool. Halve the papaya and, with the help of a tablespoon, scoop out the seeds. Peel it and slice it into half moons.
Prepare the dressing by mixing in a ramekin the lemon juice, Cajun, soy sauce, Tabasco, and maple syrup.
Transfer everything into a mixing bowl, then add the parsley and peanuts. Mix well and put in the fridge for 15 minutes before serving.
Transfer to the serving plate, accompanying if desired by a few potato chips.
