Guacamole

Who doesn’t like guacamole? We for sure do. It’s super easy to make, and you can get extremely easy or extremely fancy, plain or spicy. In any case, guacamole is a great dip! The only important thing is to use ripe avocados, easy to peel and to mash. One trick to make avocado ripen very quickly is to put them aside bananas. They will both ripen in 48 hours.
This guacamole is moderately spicy: if it’s too much for you, just leave out the chili pepper, or add only a couple of thin slices instead.
Ingredients
- 4 ripe avocados
- 4 cherry plum tomatoes
- ¼ of a large red onion
- ½ green chili pepper
- 1 tablespoon minced parsley
- Juice of 1 lime
- Salt and pepper, to taste
Preparation
Peel, core, and dice the avocados. Transfer to the mixer’s cup.
Rinse and halve the cherry plum tomatoes. Thinly slice the green chili pepper and the onion. Transfer everything to the mixer’s bowl. Add the lime juice and the minced parsley. Season with salt and pepper, to taste. Pulse gently to roughly mash the vegetables.
Drizzle with olive oil if desired and serve. Enjoy!
