Lime squash is a mocktail that we first tasted in Barbados. It’s easy to make, delicious, light, elegant and refreshing. We got hooked on it at our first sip. And no, it doesn’t involve any squash at all.
Its flavor is given by a combination of carbonated water and a syrup of sugar and lime. Add a couple of candied cherries and there you go!
- Juice of 4 limes
- 1/3 cup of sugar
- Carbonated water
- Ice cubes
- 2 slices of lime
- 4 candied cherries
Halve and squeeze the limes. Put the juice aside.
Pour the lime juice into a small saucepan. Add the sugar and cook over a low heat for 2-3 minutes, continually stirring until the sugar completely dissolves. As it starts to bubble, turn the heat off, transfer the syrup to a cold container and set aside to cool for 10-15 minutes.
Stick a couple of candied cherries to a toothpick. Transfer the cherries and ice cubes in the serving glasses. When the syrup is cold, pour it over the ice. Finally, add the carbonated water and mix well.
Let the bubbles dissipate and enjoy!
