Polynesian Salad in Soyu

Some of the dishes of Polynesian cuisine are of Asian origin. They represent the large Chinese colony that settled in the cotton plantations of the islands. This salad is inspired to the cuisine of that community and its key feature is its creamy “soyu” dressing.
This salad is very simple and delicious. It’s perfect to accompany faux meats like Italian or German sausages. Try it out!
Ingredients
- ½ Wombok (Chinese cabbage) head
- 1 carrot
- 2 green onions
- 1 tablespoon maple syrup
- 1 tablespoon coconut milk
- 1 tablespoon soy sauce
- 2 tablespoons coconut oil
- 1 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
Preparation
Rinse and thinly slice the wombok into strips. Peel al shave the carrot. Then, halve the strips and transfer everything to a large mixing bowl. Rinse and Thinly slice the green onions and put them in a ramekin.
While the faux meat of your choice cooks, prepare the dressing by mixing together all the remaining ingredients.
Pour the dressing into the mixing bowl and stir well. Transfer to the serving dishes an enjoy!
