Raspberry Scones

How delicious are scones? They are the perfect treat for 5-O’Clock tea, in the best British tradition. For perfection, slice them in a half and put a bit of coconut butter in between.
Scones are also an excellent way to start your day with a bit of sweetness.
Here, I have prepared them with whole wheat flour, unsweetened coconut yogurt, and raspberries. Try them out!
Ingredients
- 1 cup whole wheat flour
- Pinch of salt
- 1 teaspoon baking powder
- Pinch of baking soda
- 1 flaxseed egg
- 1/3 cup unsweetened coconut yogurt
- 1 tablespoon coconut oil
- 3 tablespoons maple syrup
- 4 tablespoons raspberries
Preparation
Put paper molds in the baking tin. Prepare the flaxseed egg by mixing 1 tablespoon flaxseed meal and 3 tablespoons water. Set aside. In a small bowl, mix the yogurt, oil and maple syrup. Mix it with flaxseed egg.
In a large bowl, whisk together whole wheat flour, salt, baking powder and baking soda. Mix with the ingredients in the other bowl. Dust the raspberries with a bit of whole wheat flour and incorporate them in the dough.
Split the dough into 6 molds and bake for 30 minutes at 350 degrees. Take out of the oven and let settle for 15-20 minutes before eating.
Enjoy as is or with butter.
