This dish of humble origin is flavourful, healthy, and quick to prepare. The recipes comes straight up from the culinary tradition of northern Italy, where cabbage is used in many Fall and Winter dishes.

This cabbage and fakon pasta can be prepared in 20 odd minutes, and will satisfy the entire family in a healthy and delicious way.

To prepare it, bring a large pot of water to the boil and cook a diced potato for 8-10 minutes. In the meanwhile, heat a skillet with a little olive oil, garlic paste, and fakon bits (vegan bacon). Add the thinly sliced cabbage and mix to coat with the oil. Season with the spices, then add a little water and cover with a lid. Cook for 15 minutes over a low heat.

In the meanwhile, add the pasta to the boiling pot of water and cook according to the instructions on the package. Drain, and transfer the pasta and potatoes to the skillet.Mixe, then take off the heat serve.

Slice and dice

Peel the potato and dice it into small cubes. Thinly slice the cabbage. If using, thinly slice the vegan ham into thin strips.

Boil the potato

Bring a large pot of water to the boil together with a pinch or rock salt. Add the potato and cook for 7-8 minutes.

Cook the cabbage

Heat a skillet with the olive oil, garlic paste, and fakon bits. Add the cabbage and mix well to coat it with oil. If using, add the vegan ham, then season with the vegetable powder and sweet paprika. Mix well, add a little water (just enough to cover the bottom of the skillet) and then cover with a lid. Cook for 10 minutes over a low heat.

Cook the pasta

Add the pasta to the pot and cook according to the instructions on the package. When al dente, drain and transfer to the skillet.

Mix and serve

Mix well the pasta until well coated with the cabbage condiment, then transfer to to serving bowls. Enjoy hot!
