Capricciosa salad might look like another slaw, but it’s much richer than any other regular slaw you’ve ever tasted. It has julienned celeriac, carrots, roasted peppers, cheese, and ham, in a sauce made of mayonnaise and mustard. It’s utterly delicious, but keep an eye on the calories, as it’s definitely not scale-friendly…

In Italy, it is traditionally eaten ay Christmas, as a side dish, or as a spread accompanied with bread sticks or crackers throughout the meal.

Capricciosa is very easy to prepare: julienne the vegetables, season, and add the sauce. Mix everything in a bowl and refrigerate for at least one hour before serving.

Julienne the ingredients

Peel the celeriac and slice it into large chunks. Prepare a large salad bowl filled 3/4 with water and a tablespoon of cider vinegar. Julienne the celeriac with the help of a julienne peeler: as you do that, transfer the sticks to the salad bowl. The vinegar will prevent the vegetables from turning brown.
Peel and julienne the carrots too.
Cut into thin strips the roasted bell peppers, ham slices, and cheese (if not already shredded or in sticks).

Mix and season

Transfer the celeriac sticks to a clean towel and gently pat them dry. Transfer them to a clean salad bowl, together with the carrot, roasted pepper, shredded cheese, and ham. Add one tablespoon of cider vinegar and gently mix. Then, add the vegan mayonnaise and the mustard. Stir well and refrigerate for at least one hour before serving to firm the texture.

Serve your capricciosa salad as a side (small portions!) or as a spread accompanied with bread, bread sticks, or crackers.
