Here’s another Italian treat that’s usually enjoyed throughout the Christmas period: stuffed Medjool date. In the original recipe, dates are stuffed with mascarpone cheese and sugar, and then sprinkled with cocoa or cinnamon. This vegan version substitutes Mascarpone cheese with vegan creamed cheese and soft tofu. The result is really excellent. If you’ve never tried them, you will be surprised by how good they taste!
To prepare them start with cutting the dates lengthwise on one side (the need to remain intact on the other side). If they have a pit, remove it. Then, prepare the filling my mixing all the ingredients together until smooth. With a pipe or a teaspoon, fill each date and add a bit more to cover completely the cut side. Finally, sprinkle with cinnamon. Chill in fridge for at least 30 minutes before serving.
