6 Medjool Dates I would not recommend using smaller dates
1/2 cup soft or silken tofu Tofu
2 cubes (or one teaspoon) Sugar
1 tablespoon Cashew cheese Any plain, spreadable cheese will do
1/2 teaspoon Cinnamon

Here’s another Italian treat that’s usually enjoyed throughout the Christmas period: stuffed Medjool date. In the original recipe, dates are stuffed with mascarpone cheese and sugar,  and then sprinkled with cocoa or cinnamon. This vegan version substitutes Mascarpone cheese with vegan creamed cheese and soft tofu. The result is really excellent. If you’ve never tried them, you will be surprised by how good they taste!

To prepare them start with cutting the dates lengthwise on one side (the need to remain intact on the other side). If they have a pit, remove it. Then, prepare the filling my mixing all the ingredients together until smooth. With a pipe or a teaspoon, fill each date and add a bit more to cover completely the cut side. Finally, sprinkle with cinnamon. Chill in fridge for at least 30 minutes before serving.

Cut and pit the dates

Cut the dates on one side only, making sure that they can be opened like a pocket. If they are not pitted, remove the pit.

Prepare the filling

Mix together the soft tofu, sugar, and cream cheese until you obtain a soft cream.

Stuff the dates

With the help of a teaspoon or a pipe, stuff the dates and make sure that the stuffing covers the cut side. Sprinkle a little cinnamon on top and refrigerate for at least 30 minutes.
