Ingredients

1 pack extra-firm Tofu
2 green Sweet bell peppers
For the coriander wash:
3 tablespoons Olive oil
1 teaspoon ground Coriander seeds
1 tablespoon juice Lemon
1 pinch Salt and pepper
For the miso sauce:
1 tablespoon Olive oil
2 tablespoons white Miso
1/2 cup Hemp hearts
2 teaspoons Sesame seeds
1 tablespoon Lemon
1/3 cup Water

Coriander tofu and green peppers is an aromatic dish that’s light and filling at the same time.

Both the tofu and peppers are brushed with an olive oil and coriander wash, then baked in the oven for 30 minutes and drizzled in a delicious hemp hearts, sesame seeds, and white miso dressing. If you’re in doubt about the flavour of the sauce based on your choice of miso, wait until after blended to adjust with salt: miso can be quite salty, so it doesn’t need additional seasoning.

You can use the miso sauce also for boiled vegetables or salads.

Here, we have accompanied the dish with a lentil-and-roasted-red-pepper salad and some leftover potato and green bean salad.

Slice and dice

Pre-heat the oven to 400 degrees. Rinse well the sweet bell peppers, quarter them and core them. Pat the tofu dry and squeeze it to extract as much water as possible. Cut it into small cutlets.

Brush with the wash

In a ramekin, whisk together the ingredients for the coriander wash. Then, transfer the peppers and tofu pieces to a baking dish and brush them with the wash on all sides.

Bake

Transfer the baking tray to the oven and bake for 30 minutes. The tofu cutlets should be golden and slightly crunchy on the outside. Take the baking dish out of the oven and allow to cool down for 1 minute.

Prepare the miso dressing

While the tofu is baking, prepare the miso dressing by blending all the ingredients for the dressing in the food processor. You should obtain a smooth texture.

Serve

Transfer the peppers and tofu to the serving plates, drizzle with the miso dressing, and serve.
