Directions
Dafina is a typical Moroccan dish made of a potato and chickpea soup with rice and wheat. In the traditional recipe, rice and wheat are cooked separately in baking bags containing half of the spices and then cooked in the same crockpot.
Needless to say, the traditional way also requires a long cooking time. This recipe cuts on the cooking time but not on the flavour.
To prepare your dafina express, do all the dicing and slicing first. Stir-fry onion, then add all the other ingredients, add vegetable broth, cover with a fitting lid and cook for 20 minutes.
Serve hot and enjoy!
