These chocolate chip cookies are soft and moist in the middle, they have no sugar, they’re vegan and gluten free. To give the sweetness and moisture we have used, indeed, a ripe banana and maple syrup.

To prepare them, mix together the flour, cocoa powder, baking powder, and salt. Put the vegetable butter and the chocolate in a bowl, and put in the microwave for 1 minute. Whisk them together to melt all the chocolate and set aside.

Put the banana and the maple syrup in the mixer and pulse until you obtain a smooth cream. Then, transfer the chocolate to the cup and blend until smooth.

Pour the wet ingredients into the bowl with the flour and stir gently to incorporate, until you obtain a thick paste.

Spoon the paste onto a baking tray covered in parchment paper and sprinkle with chocolate chips. Put in the oven and bake for 12 minutes.

When cooked, take out of the oven and transfer the cookies to a rack to cool. Wait at least 30 minutes before serving.

Mix the powders

Pre-heat the oven at 350 degrees. In a large bowl, mix together the flour, cocoa powder, baking powder, and salt. Set aside.

Melt the chocolate

Roughly chop the chocolate into pieces, then transfer it to a bowl together with the butter. You can add some extra chocolate chips here. Put the bowl in the microwave for 20 seconds, stir, then put it back for another 20-25 seconds. Whisk until all the chocolate pieces are melted and you obtain a smooth and creamy texture.

Join the liquid ingredients

Put the banana and the maple syrup in a food processor and pulse until you obtain a smooth texture. Add the melted chocolate and process again until completely incorporated.

Make the cookies

Transfer the liquid mix into the bowl and incorporate with the flour. Whisk until you obtain a thick consistence. Line a baking tray with parchment paper, then form the cookies by dropping a couple of tablespoons of the mixture on the tray, making sure that they are fairly distanced. Flatten them a bit with the back of the spoon and sprinkle each lump with chocolate chips.

Bake

Put in the oven and bake for 10-12 minutes. Then, take out of the oven, allow to settle for a couple of minutes, and transfer the cookies to a rack to cool.

Serve

Allow the cookies to cool down for at least 30 minutes before serving. They are perfect with coffee!
