Endive salad is typically prepared with apples. This version of the salad adds some extra sweetness with pineapple slices. Everything is dressed in a traditional old Dijon mustard vinaigrette.

To prepare it, slice the endive thinly, mix it with pineapple, green onion, and green apple cubes. Prepare the dressing with olive oil, lemon juice, and old Dijon mustard. Mix it all together and enjoy with your favorite vegan sausages.

Slice and dice

Rinse the endive, discard the outer leaves and thinly slice it. Rinse and thinly slice the green onion. Squeeze the lemon. Rinse the apple, quarter, peel and de-seed it. Soak the apple slices in the lemon juice to prevent them to brown. Dice the pineapple. Transfer everything to a mixing bowl. Retain the extra lemon juice and keep it aside for the dressing.

Mix the olive oil, lemon juice, and old Dijon mustard.

Cook the sausages, mix and serve

Cook the sausages in a drop of olive oil for 5 minutes. Pour the dressing onto the salad and mix well. Transfer the sausages and endive salad to the plates and serve.
