1 fresh cored and peeled Pineapple
1 large Zucchini
1 block extra-firm Tofu
2 tablespoons Olive oil For brushing
For the marinade:
1/2 cup Tomato sauce
2 teaspoons Dijon mustard
2 tablespoons Rice vinegar
2 tablespoons Maple syrup
2 tablespoons Orange juice
1 pinch each Salt and pepper

A colourful and refreshing dish for a hot summer day: grilled pineapple is the king of this colourful platter!

Grilled fruit is as delicious as grilled vegetables. And pineapple is not exception: especially in summer, it’s refreshing, juicy, and filling. It well accompanies grilled zucchini and marinated tofu in a BBQ-style sauce. Serve it on a platter and enjoy the flavour combinations!

To prepare it, do all the slicing and dicing first. Then, brush the grill with a little oil, and heat it. Prepare the BBQ marinade for the tofu and pour it over the tofu in a shallow plate. Allow to marinate for 30 minutes: in the meanwhile, start grilling the zucchini and pineapple. Grill well on both sides, until you see the marks of the grill.

As they’re ready, transfer to your serving plate. Finally, grill the tofu and finish off by pouring the rest of the marinade over it. Transfer everything to the serving plate, sprinkle with a little salt and serve.

Slice and dice

Slice the pineapple into rounds. Rinse the zucchini, chop off its ends and discard them. Halve the zucchini and cut it into slices. Pat the tofu dry and slice it into sticks or cutlets.

Prepare the marinade

In a bowl, whisk together all the ingredients for the marinade. Transfer the tofu to a shallop plate and pour the marinade over it. Set aside for 20-30 minutes.

Brush the grill with olive oil and heat, then use the rest of the oil to brush the pineapple slices on both sides and the zucchini slices. Grill the zucchini (1-2 minutes per side) and the pineapple (3-4 minutes per side), then grill the tofu. Pour the rest of the marinade over the tofu to finish the cooking. Transfer everything to a serving platter. Sprinkle with a little salt.
