This winter salad has it all: it’s warm, full of flavours, light, and filling. Inspired to the French cuisine, it’s made with grilled plums, rocket, and spinach, topped with some vegan feta cheese, thyme, and a balsamic vinegar vinaigrette.

This grilled plum salad can be used as a side dish or as a light meal. It’s easily prepared and it will surprise you!

To prepare it, first halve and pit the plums. Chop the greens, add them to a bowl, and then prepare the vinaigrette by whisking all the ingredients together. Drizzle the vinaigrette on the greens, but not mix it as yet. Let it sit as is. Top with the crumbled feta. Then, heat the grill and dispose the plums on it face down first. Do not brush the grill with oil: lay the plums directly on the grill and cook them for a couple of minutes. Then, flip them and cook them for another couple of minutes. Be careful not to overcook them. Finally, transfer the plums to the salad bowl, sprinkle with thyme, and mix everything together.

Transfer to the serving plates and drizzle with a little maple syrup. Serve warm and enjoy!

Pit the plums

Rinse the plums, halve them, and remove the pit. Heat the grilling pan.

Chop the greens

Chop the greens and transfer them to a large bowl.

Prepare the vinaigrette

Whisk together the ingredients for the vinaigrette and pour it over the greens. Do not mix - just leave them sitting in the bowl.

Grill the plums

Lay the plums face down directly on the grill. Do not brush with oil. The plums will caramelize with the heat. When you can see the black marks of the grill on their bottom surface, flip them and cook them for another couple of minutes. Be careful not to overcook them. Then, take off the heat.

Crumble the feta

Crumble the vegan feta cheese or dice it thinly, then lay it on top of the greens.

Mix and garnish

Transfer the plums to the bowl, and mix well. Sprinkle with a little thyme, then transfer the salad to the serving dishes. Drizzle with a little maple syrup and serve.
