Directions
So easy to make and yet so delicious! This grilled zucchini salad can be made at any time, to accompany any type of mains.
Slice the zucchini into rounds, grill them on both sides, season with salt and pepper, sprinkle with fresh mint leaves and drizzle with lemon juice.

GrillHeat 1 tablespoon olive oil in a large skillet or a grilling pan. Place the zucchini rounds in the skillet, season with salt and pepper, and cook for a few minutes until they start to show brown spots. Flip them to allow to grill evenly on both sides. When they're ready, transfer them to the serving plates or bowls. Repeat if you have to grill them in batches. |
