Lemon and Parmesan is one of those combinations that are just right. This simple side dish is super-easy to prepare and it will surprise you for its flavours.

To prepare these Lemon-and-Parmesan roasted peppers quarter the peppers, brush them with the olive oil and seasoning, and put them in the oven for 30 minutes. When they’re soft, take out of the oven, sprinkle with the grated vegan Parmesan0like cheese, and put them back in the oven to broil for 2 minutes. As the pepper edges start to brown, take them out of the oven and drizzle with freshly squeezed lemon juice.

Serve as a side or as a delicious entree.

Quarter the peppers

Pre-heat the oven to 350 degrees. Rinse well the peppers, core and quarter them. Remove all the seeds.

Season the peppers

In a small bowl, mix the olive oil with salt, pepper, thyme, and garlic paste. Brush the bottom of a baking tray with the mixture, then brush the peppers on all sides and transfer them to the baking tray.

Roast

Roast the peppers in the oven at 350 degrees for 25-30 minutes. When they're soft, take them out of the oven and sprinkle them with the vegan Parmesan-like cheese. Then, put back in the oven and broil for 2 minutes. When the edges of the peppers start to brown, take them out of the oven. Drizzle with freshly squeezed lemon juice.
