Masala rice is a nice and easy way to reuse cooked rice and transform it into an interesting side dish for your vegan protein.

To prepare it, dice the tomatoes first. Heat the oil in a skillet, then add the spices, the tomatoes, tomato sauce, chilli pepper paste, and season with salt and pepper. Add the cooked rice and mix well.

Serve with a sprinkle of fresh parsley.

Chop the tomatoes

Rinse well the tomatoes, then chop them.

Prepare the masala

Heat the oil in a skillet, add the dried onion, and the garlic powder. Cook for one minute, then add the chopped tomatoes, tomato sauce, and chili pepper paste. Season with sea salt, and continue to cook for 3-4 minutes.

Add the rice, mix well, and cook for a couple of minutes. Then, take off the heat, sprinkle with fresh parsley, and mix again.
