Provençal Tomatoes are a wonderful way of using up excess tomatoes. Differently than stuffed tomatoes, in this recipe, tomatoes are topped with a tasty mix of spices and breadcrumbs. You can either halve the tomato or slice it: if you halve it, add 5-10 minutes to the baking time.

If you love tomatoes as I do, you will love this recipe, as tomatoes stay light and they taste wonderfully! You can serve Provencal tomatoes as a side or as an entry.

To prepare them, rinse and slice (or halve) the tomatoes, then lay them in a greased baking dish, cut side up. In a small pot, heat the oil and add the green onion, parsley, and garlic paste. When they start to sizzle, mix in the breadcrumbs and take off the heat. Season the tomatoes with a little salt and pepper, then top with the bread crumb mix. Finally, put in the oven for 20 minutes.

Serve your tomatoes hot, as a side dish or as an entry!

Slice the tomatoes

Pre-heat the oven at 400 F degrees. Grease the baking dish with a little vegetable butter and set aside. Rinse well the tomatoes and slice them into thick rounds. Lay each slide in the baking dish, with no overlapping.

Prepare the topping

Heat the oil in a small sauce pot, then add the green onion, garlic paste, and parsley. When it starts to sizzle, mix in the gluten-free breadcrumbs. When all the oil is absorbed, take off the heat.

Season the tomatoes with a little salt and pepper (use just a little, as tomatoes absorb spices very easily), then top them with the breadcrumb mix. Put in the oven for 20 minutes, until the topping is golden and crispy.



Take the dish out of the oven and set aside for a couple of minutes to cool down. Serve and enjoy!
