1 block firm or medium Tofu

Directions
In the Caribbean, this side dish is known as Spanish rice, even if most probably it has nothing to do with Spanish cuisine. It is however delicious and can be easily prepared in a vegan version.
To prepare it, cook the rice in boiling water. Process the tofu, together with turmeric, milk, and cornstarch in the mixer. Cook the green pepper, tomatoes, and curry powder in melted vegan butter. As it gets saucy, add the tofu mixture, tomato sauce, mustard, parsley, and rice. Mix well, then take off the heat. Cover with breadcrumbs and broil in the oven for 5 minutes.
Take out of the oven and allow to cool down for a few minutes before serving.
Enjoy, accompanying with vegetables or a bean stew.

Cook for one minute, then add the curry powder and cook for 5-6 minutes until they get saucy. Add the tofu mix, rice, tomato sauce, parsley, and mustard. Season with salt and pepper, and mix well. Cover with breadcrumbs. |
