1 cup Basmati rice
2 tablespoons Vegetable butter
1 tablespoon Dried onion
1 small green Sweet bell peppers
2 Italian Tomato
1 tablespoon Garam Masala
1 block firm or medium Tofu
2 tablespoons Oat milk You can use any type of vegetable milk
1 teaspoon Sea salt
1/2 teaspoon Turmeric
1/2 teaspoon Corn starch
2 tablespoons Tomato sauce
1/2 cup fresh Parsley
1 teaspoon Dijon mustard
3 tablespoons gluten-free Breadcrumbs

Despite the name, Spanish rice is a Caribbean dish, where it is very popular for its deliciousness and simplicity to cook.

In the Caribbean, this side dish is known as Spanish rice, even if most probably it has nothing to do with Spanish cuisine. It is however delicious and can be easily prepared in a vegan version.

To prepare it, cook the rice in boiling water. Process the tofu, together with turmeric, milk, and cornstarch in the mixer. Cook the green pepper, tomatoes, and curry powder in melted vegan butter. As it gets saucy, add the tofu mixture, tomato sauce, mustard, parsley, and rice. Mix well, then take off the heat. Cover with breadcrumbs and broil in the oven for 5 minutes.

Take out of the oven and allow to cool down for a few minutes before serving.

Enjoy, accompanying with vegetables or a bean stew.

Cook the rice

Cook the rice in abundant water, until it’s soft and the water has been completely absorbed.

Slice and dice

Rinse well the bell pepper and the tomatoes. Core and quarter the green bell pepper, then mince it in the mixer. Dice the tomatoes and the tofu.
Transfer the diced tofu in the blender’s cup, together with the turmeric, milk, salt, and corn starch. Process until smooth and set aside.

Prepare the sauté

Melt the vegetable butter in a French cocotte or a French oven. Add the onion, green pepper, and tomato. Cook for one minute, then add the curry powder and cook for 5-6 minutes until they get saucy. Add the tofu mix, rice, tomato sauce, parsley, and mustard. Season with salt and pepper, and mix well. Cover with breadcrumbs.

Put in the oven and broil for 2-3 minutes, until a thin crust is formed on the surface. Take out of the oven and allow to cool down for a few minutes.



Serve hot or warm, as is or accompanied by vegetables or stewed beans.
