Directions
Stracotto («extra cooked») is an Italian stew made with a base of tomatoes, cabbage, and meat. In this vegan version, we have substituted meat with shefu tofu pieces and maintained all the deliciousness of the original recipe.
Preparing stracotto is very simple: heat a little olive oil in a casserole together with the onion. Add the chopped tomatoes. Add a little water, vegetable powder, and white pepper. Then, add the finely shredded cabbage. Cover with a lid and cook for 30 minutes. Take off the lid, stir, add the tofu and maple syrup, and cook for another 30 minutes (lid off) over low heat, or until the excess water has evaporated.
The cabbage should be soft and velvety, while the tomato should be completely broken down in a nice sauce.
Take off the heat and allow to settle for a couple of minutes before serving.
