Directions
Tiramisu’ is perhaps one of the most famous Italian desserts. Creamy, and with subtle notes of coffee and chocolate, it’s a true delight for the palate. This classic coffee tiramisu’ is served in a glass, but if you wish to prepare it in a larger portion, just leave the ladyfingers whole and follow the same process. This tiramisu’ is light and delicate, and that’s the perfect treat for a special day or a classy dessert to impress your guests!
To prepare it, make 1 cup of your favorite coffee (we prepared Italian espresso, unsweetened). Pour your coffee into a bowl, and set aside to cool.
Then, prepare the neutral cream by mixing together coconut milk and silken tofu. Add a couple of tablespoons of the cream to the bottom of your glasses. Then, prepare the coffee cream by adding two tablespoons of coffee to the neutral cream. Mix well until you obtain the same smooth texture and set aside.
Shave the dark chocolate, then slice the ladyfingers into smaller pieces. Dip the ladyfingers into the coffee, and transfer them to the glasses to form a complete layer. Sprinkle with chocolate shavings, then top with another layer of coffee cream. Repeat this process until you reach the top of your glass.
Sprinkle the top of your tiramisu’ with cocoa powder, then add some more chocolate shaving. Garnish with whipped rice cream and a bit more chocolate shaving.
Refrigerate for at least 30 minutes before serving.

Make coffeePrepare one cup of your favorite coffee. We prepared Italian espresso with a moka coffeemaker, but we also recommend American vanilla or noisette coffee for more subtle flavors. Also, we didn't sweetened our coffee because ladyfingers and the base cream are already quite sweet. You can add a teaspoon sugar if you want your tiramisu' on the sweeter side. While your coffee is brewing, slice the ladyfingers into smaller pieces and set aside. Shave the dark chocolate and set aside. When the coffee is ready, pour it into a bowl and set aside to cool. |

Prepare the creamsTiramisu' uses two types of cream: a neutral one and one coffee flavored. Start with preparing the neutral cream by mixing together the thicker part of the coconut milk (the white one) together with silken tofu in the mixer. Process until you obtain a smooth and creamy texture. It should be light and have body. Transfer a couple of tablespoons of this cream to the serving glasses, to cover their bottom. Then, add two tablespoons of coffee to the rest of the cream, and mix again until smooth and completely incorporated. |

Compose the layersQuickly dip the ladyfingers in the coffee (make sure you don't dip them long enough to make them soggy), then transfer them to the serving glasses to form a complete layer. Sprinkle some chocolate shaving, then cover with a layer of coffee cream. Repeat this process until you reach the top of the glass. Sprinkle the cocoa powder on top of glass, passing it through a sieve. Then, sprinkle with generous chocolate shavings. |
