Bearnaise sauce is one of the most refined condiments of French cuisine. It is typically used to accompany mild meats or fish to give them a twist of flavor. Bearnaise sauce is a variation of well-known Hollandaise sauce: the only difference between the two is that Hollandaise sauce gets its acidity from lemon juice instead of white vinegar. What gives both sauces their distinctive taste is tarragon. The sauce was named after King Henri IV, who was born in the city of Bearn in the Pyrenees mountains.

Starting from a vegan mayonnaise base (you can choose the one you prefer, but it works best with a rich type of mayonnaise), all you have to do is to cook finely diced scallion and tarragon in a mix of white vinegar, white wine, salt and pepper. You then drain them from the excess liquid and incorporate in the mayonnaise.

Dice

Peel and slice the scallion. If you're using fresh tarragon, rinse it and finely chop it. Transfer them to a small sauce pot, together with salt and pepper.

Cook

Add the water, white wine and vinegar to the sauce pot and cook for 5 minutes over medium heat. Take off the heat.

Drain and incorporate

Drain the herbs from the excess liquid in the pot. transfer to a ramekin or a serving bowl and let cool down for 1 minute. Add the vegan mayonnaise and fold it well to incorporate the herbs. Put in the fridge for 15 minutes before using.
