Directions
This easy-to-make dish will save your day and is really scrumptious!
The main ingredients are zucchini, sweet bell peppers, and cherry tomatoes. Dice them into small cubes, coat them with a mix of olive oil, garlic paste, Italian herbs, and breadcrumbs, and put in the oven for 30 minutes.
In the meanwhile, grill the vegan chicken. If you don’t have similar-chicken choices, you can as well use plain tofu, lightly seasoned with salt and pepper. Here, I have used unflavoured Shefu tofu.
Serve with vegan mayo or your favourite sauce and your dinner is fixed!
