Roasted tofu and Brussel sprouts

We are not frequent tofu eaters, but every now and then tofu is a light and refreshing ingredient for summer dishes. Here’s a simple way to cook tofu: pan-roasted with a seasoning of soy sauce, lime, and maple syrup, together with halved Brussel sprouts.

Ingredients
- 250 gr firm tofu
- 20-25 Brussel sprouts
- 1 tablespoon sesame seed oil
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- Juice of 1 lime
- Twist of pepper
Preparation
Dice the tofu. Clean the Brussel sprouts and halve them. In a large skillet, add the sesame seed oil and heat to high. Add the tofu and the soy sauce, and let roast until browned. Add the Brussel sprouts, lemon, and maple syrup. Cover with the skillet top, turn the heat to medium and let simmer until the Brussel sprouts are cooked. Stir occasionally so the tofu absorbs the flavor on all sides.
When cooked, transfer to a serving bowl and give it a turn of black pepper. Serve hot!
