Saint Lucia Salad

Saint Lucia is a small paradise island in the Antilles archipelago. Its Creole cuisine uses local fresh tropical fruits to create refreshing and colorful salads, like this one.
This typical salad is made of fruit and vegetables. It’s light and tasty, and it only takes a few minutes to prepare. It’s perfect for office lunches.
Ingredients
- 3 large pineapple chunks
- 6-7 cherry tomatoes
- 1 red bell pepper
- 2 kiwis
- 1 banana
- 1 can of corn niblets
- A 1-in piece of ginger root
- 2-3 mint leaves
- 3 tablespoons unsweetened coconut shreds
- Juice of ½ lime
- Walnut oil
- Salt and pepper, to taste
Preparation
Rinse the corn niblets under running water and transfer to a large mixing bowl. Peel, core, and remove the skin of the pineapple. Cut it into large chunks and dice three of them into bite-sized pieces. Peel and slice the banana and the kiwis, and transfer to the mixing bowl. Squeeze the lime and pour its juice onto the fresh fruit in the mixing bowl.
Rinse and grate the fresh ginger root in the mixing bowl. Rinse and dice the red pepper and cherry tomatoes and transfer to the mixing bowl. Add the coconut shreds and season with mint, salt, and pepper to taste.
Mix well and set aside for a few minutes before serving.
