Spanish fabada

Spanish fabada is a quicker to make and tastier version of the typical Italian Fava bean soup. This Spanish dish, indeed, uses a mix of spices to give more flavor to the plain taste of fava beans. The result is delicious and you can prepare it in only 15 minutes by using canned fava beans or pre-cooked beans. It’s one of those dishes that saves the day when you’re in a hurry or you have very little time to cook!
As I do with many Mediterranean recipes, I reduced the amount of garlic (I used 1 clove instead of 4). Feel free to add the amount of garlic you like, according to your taste!
Ingredients
- 1 can fava beans
- 1 yellow onion
- 1 clove garlic
- 1 tablespoon olive oil
- 1 cup water
- Pinch of salt
- Pinch of pepper
- 2 tablespoons sweet paprika
- 1 tablespoon turmeric
- 4 bay leaves
- Splash of soy cream (if desired) or olive oil, to decorate
Preparation
Peel the onion and garlic, and thinly slice them. Transfer to a saucepan with a little olive oil and heat to medium, until the onion is soft. Add a cup of water and 1/4 of the can of fava beans. Blend them until smooth.
Add the rest of the fava beans and the spices and let cook for 10 minutes. Adjust with salt and pepper, drizzle with olive oil or add a splotch of soy cream to serve.
