Tacos

When it comes to finger food, tacos are a messy choice. You must eat them carefully, or something will fall down while you bite.
And yet, Simona loves “messy”, so… why not? After all, they are delicious and easy to prepare, ideal for a lunch or dinner on the go.
We like to make them spicy and colorful, with no cheese. Simona prepares the spicy soy mince, and I take care of the veggies and of putting them together.
Here’s how to make them!
Ingredients
- 2 cups soy mince
- 1/4 cup sweet peas
- 1 teaspoon chili flakes
- 1 onion
- A little olive oil
- 6 taco shells
- 1 tablespoon paprika
- 1/2 cup tomato sauce
- 1 teaspoon vegetable powder
- 2 lettuce leaves
- 1 tomato
Preparation
Add a little olive oil in a large saucepan and heat to low. Add the onion and let simmer for a few minutes, until soft and golden. Add the sweet peas, soy mince, and tomato sauce. Mix well. Season with paprika, vegetable powder, and chili flakes. When everything is cooked, turn off the heat and set aside to let it cool.
Rinse the lettuce and tomato. Slice as thinly as you can. Prepare the taco shells on the serving plate. With a spoon, fill them with the soy mince on the bottom and then add the tomato slices and lettuce. Repeat for all the shells.
