Vegan panna cotta

Panna cotta is an Italian dessert that is considered a worldwide delicacy. It is one of the most popular desserts when eating at a restaurant, both because of its delicate and refreshing taste, and also because of its elegant and refined look. Had I known earlier it was that easy to make at home!
This recipe is super easy and it’s perfect to impress guests or for a special, effortless treat.
Ingredients
- 1 can full-fat coconut milk
- 2 tablespoons maple syrup
- 2 teaspoons guar gum
- Fresh or frozen berries, to decorate
Preparation
Transfer the coconut milk, maple syrup and guar gum to a cooking pan. Bring to the boil, whisking continuously.
Pour into silicon molds and put into the fridge to cool down for at least 2 hours. Turn the pannacotta out into serving plates (or use them as is, if preferred) and decorate with fresh or frozen fruit. Here, I used frozen pomegranate and raspberries.
