Vegan stracchinella

Stracchinella is an Italian type of soft cheese that is almost like a spread. It can be used on pizza for a tangy twist instead of mozzarella, or it can be enjoyed with breadsticks, biscuits or crackers.
This vegan stracchinella is inspired to middle-eastern Labneh cheese, and it’s super easy to prepare. Indeed, it only takes 5 minutes to make, with only a few ingredients.
As a thickener, I used guar gum, also known as guaran. This is a substance made from guar beans, that is also gluten-free.
Ingredients
- 1 cup plain, vegan yogurt
- 2 teaspoons lemon juice
- 1 teaspoon maple syrup
- Pinch of garlic salt
- Pinch of thyme (if desired)
- 1/2 teaspoon guar gum
Preparation
Mix the yogurt with all the ingredients except for the guar gum. Once they are evenly mixed, add the guar gum a few drops at a time, to avoid the formation of lumps. Stir it in slowly, and mix until you obtain a smooth cream.
Transfer to a ramekin or a small bowl and put in the fridge to settle for at least 30 minutes.
Enjoy as preferred… As a healthy snack, try it also with raw cherry tomatoes, green olives or small lettuce leaves!
