Wine-scented Lentils in Lemon Sauce
Bean and lentil salads are great meals to fill you up and give you a protein boost. This lentil salad is also extremely refreshing, thanks to its lemony dressing. Here, I have used canned chickpeas, but I have spent some extra time to cook French green lentils in white wine and rosemary. The extra flavor and scent are all worth the effort and the wait… it takes around 45 minutes to prepare, most of which is unattended.
The result is a delicious and complete meal.
- 2 cups French green lentils (dry)
- 1 can chickpeas
- 1 tablespoon olive oil
- 1 garlic clove
- 1 tablespoon dried rosemary
- 1 glass of white wine
- 3-4 cherry tomatoes
- 1 green onion
- 1 fresh red onion
- Handful minced parsley
- Handful dried tarragon leaves
- Pinch of thyme leaves
- Salt and pepper, to taste
- 1 teaspoon vegetable powder
For the dressing:
- Juice of two lemons
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup
- Pinch of garlic salt and pepper
Peel and thinly slice the garlic clove. Heat the olive oil, rosemary and garlic in a large skillet, until the garlic starts to brown and the rosemary releases its scent in the air. Rinse the lentils under running water, drain and transfer to the skillet. Mix well, then add the white wine. Let evaporate completely and then add three cups water and the vegetable powder. Cook for 30 minutes over a high heat, adding water if necessary.
Prepare the dressing by mixing together all the ingredients. Set aside. Drain the chickpeas and transfer to a large mixing bowl. Rinse and halve the cherry tomatoes. Peel and quarter the red onion and thinly slice it. Transfer to the mixing bowl together with the chickpeas. Add dried tarragon, thyme leaves, salt and pepper to taste.
When the lentils are cooked (they should be soft but not mushy), drain and rinse them again under cold running water. Transfer them to the mixing bowl and stir to incorporate all the other ingredients. Finally, add the minced parsley, pour the dressing and mix well.
Enjoy cold or at room temperature.
