Chickpea burgers are easy and quick to prepare, they’re tasty and they can make a perfect low-carb comfort food for your lazy days. To keep the calories low, opt for whole wheat burger buns.
- 1 ¼ cup chickpeas
- ¾ cup corn niblets
- 2 tablespoons whole wheat flour
- Handful minced parsley
- 1 teaspoon cumin seeds
- Pinch of salt
- Pinch of pepper
- 2 large lettuce leaves
- 1 Italian tomato
- ½ baby cucumber
- 1 tablespoon vegan mayonnaise (or Dijon mustard)
Put the chickpeas, corn niblets, whole wheat flour, minced parsley, salt, pepper, and cumin in the food processor cup. Mix until you obtain a stick paste, leaving some of the pieces coarsely chopped.
Lightly dust a wooden board or working surface. Shape your burgers with your hands or with the help of a cookie cutter. Put in the fridge for 10 minutes to chill. Heat some olive oil in a grilling pan or a crêpe pan and cook your chickpea burgers for a few minutes.
Lightly toast the bread buns, and build your burger with vegan mayonnaise, tomato slices, lettuce and cucumber slices.
