If you’re up to a dish with a delicate flavor and no hassle to prepare, this coconut tofu stir-fry should be in your top ten list of tofu dishes.
You’ll only need a few ingredients and ten minutes (or less) to prepare. If you want a drier consistency and a more exotic flavor, you can top with coconut shreds before serving.
- 1 block extra firm tofu
- 1 tablespoon toasted sesame seed oil
- Pinch of garlic salt
- 1 teaspoon ground ginger
- 1 tablespoon Tamari sauce
- 1/2 can thick coconut milk
- Pinch of parsley
- Coconut Shreds (optional)
Dice the tofu in 1-in wide pieces. In a skillet, heat a tablespoon of toasted sesame seed oil together with a pinch of garlic salt. Transfer the tofu to the skillet and stir-fry over a high heat until the tofu turns golden. Add the ginger powder and Tamari sauce. Continue to stir-fry until they are completely absorbed.
Pour the coconut milk. Continue to cook, always stirring, until it is absorbed. Take off the heat, transfer to the serving plate and sprinkle with parsley. If desired, you can top the dish with coconut shreds.
Enjoy your coconut tofu accompanied by lettuce or a light salad.
