Dill potato salad
Potato salads are always a perfect stomach filler for parties and dinner with guests. If you have someone over for dinner and you are afraid that what you’re making might not be enough to satisfy their appetite, go for this super-easy recipe.
Dill gives a refreshing flavor to the earthy potato. Add some sweet peas to lighten the texture, and there you go!
- 1 cup frozen sweet peas
- 2-3 rooster potatoes
- 1 tablespoon vegan mayonnaise
- Dill, to taste
Peel the rooster potatoes and dice them. Steam them (they should be cooked and soft in about 15-20 minutes). Set aside to cool.
When they’re at room temperature, stir in the vegan mayonnaise, sweet peas, and dill. Mix well. Leave it in the fridge until serving time.
