Minestrina is that magic dish that makes you feel better when you feel sick. When the cold season approaches and you start to feel the first signs of a cold or the flu, a hot cup of minestrina works miracles.
It’s also very easy and quick to prepare, so if you don’t have a gentle soul to take care of you, you can easily put it together yourself and it’s ready in just 10 minutes. For minestrina, you can use any type of short and small pasta you like. One of my favorites is ditali.
- 3 cups water
- 1 tablespoon chive
- 1 tablespoon parsley
- 2 teaspoons minced onion
- 1 teaspoon vegetable powder
- 1 cup short and small pasta
- 1 tablespoon of vegan Parmesan-like cheese
Heat three cups of water to a small soup pot. Add the minced onion, chives, parsley, and vegetable powder. When the water boils, add the pasta and cook according to the instructions on the package.
Take off the heat and set aside to cool for a couple of minutes. Transfer to the serving bowl and top with a little vegan Parmesan-like cheese.
