1 pinch Salt and pepper
A handful fresh Parsley

If you like vegan shrimp cocktail, you will probably also like this fancier version with avocado. Ideal for parties and the holiday season, this recipe uses the same vegan cocktail sauce used for the traditional shrimp cocktail, and uses avocado as a base. Shrimps are still used to garnish the glass, but you can skip it if you cannot find them. You will still have a mouthwatering starter or side dish.

The preparation is very quick and easy: you first peel and dice the avocado into large chinks, then prepare the cocktail sauce and finally you mix it all together and garnish with the vegan shrimps.

Serve in cocktail glasses and the party success is guaranteed!

Peel the avocado and dice it into large chunks.

Prepare the cocktail sauce

Prepare the cocktail sauce by mixing together vegan mayonnaise, tomato sauce, Tabasco, and Grand Marnier. Mix the sauce with the avocado chunks. Season with salt and pepper, then add the parsley, roughly chopped. Mix everything and transfer to two cocktail glasses. Put in the fridge.

Decorate and serve

Boil the vegan shrimps for 5 minutes, then rinse them under cold running water. Decorate the cocktail glasses with the shrimps. Put in the fridge for 15 minutes before serving.
