175 g black bean Pasta Black bean pasta is typically gluten-free. Check the ingredients to make sure!
1 pinch Rock salt
2 tablespoons Olive oil
1 can Jackfruit Use canned jackfruit in water, not in brine
1 large Zucchini
1 teaspoon Vegetable powder
1 teaspoon smoked Paprika
To taste Parsley
For the Worcester sauce:
2 tablespoons Soy sauce
1 teaspoon juiced Lemon
1/2 tablespoon Maple syrup
6 drops Tabasco Alternatively, you can use Sriracha

Jackfruit is so versatile that you can use it as a substitute for most pork recipes and get a low-calorie version that tastes even better.

Here, we have used canned jackfruit in water, zucchini, and vegan Worcester sauce in combination with black bean pasta for a colourful and satisfying dish.

To prepare it, cook your pasta by following the instructions on the package – you can use any pasta type you like.

In the meanwhile, dice the zucchini and slice the jackfruit into smaller chunks. Cook the zucchini and jackfruit in a little olive oil for 5-6 minutes, then season with a little vegetable powder (or salt and pepper, to taste). Prepare the vegan Worcester sauce by whisking all the ingredients together, then pour over the jackfruit and zucchini. Cook for another couple of minutes, and adjust the seasoning with a little smoked paprika and parsley.

When your pasta is ready, drain and transfer to the skillet with the jackfruit and zucchini. Mix everything together, and serve well hot.

Slice and dice

Bring a large pot of water to the boil and add a pinch of rock salt in it. In the meanwhile, rinse well the zucchini and dice it. Open the jackfruit can, drain from the water and slice it into smaller chunks. This will help cooking it quicker.

Cook the pasta and its condiment

Cook the pasta by following the instructions on the package. In the meanwhile, heat the olive oil in a large skillet and add the diced zucchini and jackfruit. Cook for 5-6 minutes, stirring occasionally.

Finish the cooking and mix all together

Prepare the vegan Worcester sauce by whisking all the sauce ingredients together, then pour over the jackfruit and zucchini. Add the paprika and adjust the seasoning if needed. Continue to cook for a couple of minutes, then turn off the heat.
When the pasta is ready, drain and transfer to the skillet.
Fold the pasta gently until it's well coated with the condiment and sprinkle with a little parsley.
