250 g marinated Tofu
½ liter warm Water
2 teaspoons Vegetable powder
1 tablespoon Olive oil
1 teaspoon dried Ginger
1 teaspoon Cinnamon
4 tablespoons Soy sauce
3 tablespoons Maple syrup
A handful fresh Parsley
1 cup Basmati rice
1 teaspoon BBQ Spice

Caramelized tofu is one of those dishes you don’t forget: marinated tofu cubes are caramelized in a mix of vegetable broth, ginger powder, cinnamon, maple syrup and soy sauce for a delicious sweet and savory dish.

To prepare it, first, prepare the spiced broth by mixing all the ingredients together. Then, sauté the tofu cubes in olive oil and BBQ spice mix. Add the broth and maple syrup and cook over high heat until the tofu caramelize. Mix with fresh parsley leaves and serve with basmati rice.

15 minutes

Cook the rice

Cook the rice in abundant unsalted water (I used a rice cooker). When all the water has evaporated, keep warm for later use.

Prepare the broth

In a large bowl mix the water, vegetable powder, ginger powder, cinnamon, and soy sauce. Make sure there are no lumps left.

15 minutes

Cook the tofu

Heat the olive oil over high heat in a large skillet or a wok. Add the tofu cubes and sprinkle with the BBQ spice mix. Stir well and cook for 1 minute. Add the spiced broth and the maple syrup. Continue to cook for 10-15 minutes, until the liquid is reduced and the tofu caramelized.


Garnish and serve

Take the tofu off the heat. Toss in the skillet a handful of fresh parsley leaves and mix well. Put abundant rice in the serving bowls and top with the caramelized tofu.
