4 cloves Garlic
1 tablespoon Olive oil
1 White onion
2 red-skinned Potato
1 can Chickpeas
1 tablespoon Maple syrup
1 1/2 cup Carnaroli rice
1 cup Couscous
1 teaspoon Turmeric
1 teaspoon smoked Paprika
3 teaspoons Vegetable powder
3 cups Water
1 teaspoon Tabasco
To taste Salt and pepper

Dafina is a typical Moroccan dish made of a potato and chickpea soup with rice and wheat. In the traditional recipe, rice and wheat are cooked separately in baking bags containing half of the spices and then cooked in the same crockpot.

Needless to say, the traditional way also requires a long cooking time. This recipe cuts on the cooking time but not on the flavour.

To prepare your dafina express, do all the dicing and slicing first. Stir-fry onion, then add all the other ingredients, add vegetable broth, cover with a fitting lid and cook for 20 minutes.

Serve hot and enjoy!

Dice and Slice

Peel the onion, garlic cloves and potatoes. Dice the onion and potatoes into small pieces. Thinly slice the garlic.

Cook

Heat the olive oil in a pot over low heat and add the onion. Cook for 1-2 minutes, until it becomes translucent. Then, add the chickpeas, potatoes, maple syrup, vegetable powder and water. Then add the couscous, rice, garlic, turmeric, paprika, and Tabasco. Stir well and cook for 20 minutes.

Take off the heat, transfer to the serving bowl, and enjoy hot!
