1 pinch Black pepper
250 g linguini Pasta
1 tablespoon Non-dairy Parmesan-like cheese
1 package Soy cream

Citrus makes a great condiment for pasta. This grapefruit and lime linguini si fresh and silky at the same time, and makes an excellent spring plate. On top of that, it’s really easy to prepare: peel the grapefruit, peel the zest of the lime and squeeze it first; then cook the pasta according to the instructions on the package. While you pasta is cooking, prepare the sauce with soy cream and, finally, mix it all together and serve.

Prepare the citrus

Halve the grapefruit and remove its skin. Also remove the inside membrane layers. Halve the lime and peel its zest with the help of a potato peeler. Slice the zest thinly and set aside. Squeeze the lime and set the juice aside.

Cook the pasta

Cook the linguini in abundant boiling water and a pinch of salt. Follow the instructions on the package for the cooking time. When al dente, take off the heat and drain.

Prepare the sauce

While pasta is cooking, heat the olive oil in a casserole together with the lime zest. Add the grapefruit and season with black pepper. Cook for one minute over medium heat, then add the soy cream and stir gently. Add the lime juice and non-dairy Parmesan-like cheese. Cook for a couple more minutes, then turn the heat off and set aside.

Mix and serve

As the pasta is drained, pour it into the casserole. Mix well by folding your linguini into the sauce. Sprinkle with fresh parsley and transfer to the serving plates. Enjoy hot!
