3 cups (or all you've got) cooked Pasta
1 1/2 cup Tomato sauce
3 tablespoons Non-dairy mozzarella shreds
3 tablespoons Non-dairy Parmesan-like cheese
2 cups fresh Spinach Alternatively, you can use rocket or other sweet greens of your choice
3 tablespoons Breadcrumbs
1 teaspoon Vegetable butter For greasing the baking dish
3 tablespoons Soy cream Optional, if you want extra creaminess

Pasta bakes are one of the most popular ways to re-cook leftovers in Italian households. Pasta bakes are, creamy, crunchy, full of flavors. And they can be re-baked over and over again: it only gets better!

The markers of a great leftover pasta bake are tomato sauce, cheese, and breadcrumbs. You can use any type of leftover pasta: all you have to do is to lay it in a greased baking dish in small batches and alternate with the other ingredients, like if you where preparing a lasagna.

Put in the oven, and the result is guaranteed!

Compose the layers

Pre-heat the oven to 350 degrees. Grease your baking dish with a nut of vegetable butter. Lay the leftover pasta in small batches on the bottom of your dish. Add some tomato sauce here and there with a spoon. Sprinkle with vegan mozzarella. Add the fresh spinach (if the leaves are large, roughly chop them with a knife). Lay another layer of cooked pasta. Add more tomato sauce, sprinkle some vegan Parmesan cheese, and finally top it with breadcrumbs. Lastly, add the soy cream (if desired).

Put the baking dish in the oven and bake for 15-20 minutes. The, take the dish out of the oven.
