Adjust Servings:
300 g linguini Pasta I used a mix of white and spinach linguini, but you can use the type you want
1 cup Soy cream
1 pinch Rock salt
1 handful Basil
1 Lemon
1 tablespoon Olive oil
1 tablespoon Non-dairy Parmesan-like cheese
1 teaspoon Lemon & Pepper condiment
1 teaspoon Maple syrup

Lemon-and-Pepper Linguini

An easy recipe full of flavour: lemon-and-pepper linguini is a fresh and velvety dish that everybody will love.

Silky and refreshing, lemon-and-pepper linguini are simple and easy to prepare for a summer dinner.

To prepare it, cook the pasta according to the instruction on the package. Add a quartered lemon to the boiling water to add a citrusy flavour.

Then, prepare the sauce with soy cream, lemon zest, vegan Parmesan-like cheese and fresh basil leaves. When the pasta is al dente, drain and mix it with the sauce. Serve with a sprinkle of lemon-and-pepper condiment on top.

Cook the pasta

Rinse the lemon under warm water. Pat it dry and remove the skin with a potato peeler. Cut the lemon zest into thin strips and set aside. Quarter the lemon and put it in the pasta pot together with the water and rock salt. When the water boils, add the linguini and cook according to the instructions on the back of the package. When the pasta is al dente, drain and set aside the lemon quarters.

Prepare the lemon sauce

In a separate skillet, heat the olive oil. Add the juice of the lemon quarters, maple syrup,the soy cream, fresh basil leaves, and Parmesan-like vegan cheese. As it starts to bubble, transfer the linguini to the sauce skillet and gently fold it to incorporate the sauce. Take off the heat.


Garnish and serve

Transfer the linguini to the serving plates. Sprinkle with lemon & pepper condiment and serve. Enjoy hot!
