2 paprika-flavoured Vegan sausages Optional
1 tablespoon Dried onion
2 tablespoons Olive oil
1 heaping tablespoon sweet Paprika
1 medium-sized Tomato
1 yellow Caraway seeds
1 teaspoon Garlic paste
1/2 teaspoon Caraway seeds
To taste Salt and pepper

    Paprikas krumpli is a delicious paprika potato stew from Hungary. Comfort food, with a European twist!

    Paprikas krumpli (paprika potatoes) is a Hungarian popular dish from the countryside. It is a comforting dish that you can easily make vegan by substituting the Hungarian sausages with vegan paprika sausages (I used Gusta’s Spanish sausage). However, sausages are optional and you can leave them out altogether.  The secret of this stew, besides the deliciousness of sweet paprika, is caraway seeds, that add to the fragrance of the dish. Here’ I have used the Ajwain variety.

    To prepare it, heat the oil in a cocotte, add the garlic paste, dried onion and paprika. Cook for 30 seconds, paying attention not to burn the onion or the paprika. Then, add the chopped tomato and pepper. Season with a little salt.

    Then, add the sliced sausage, diced potatoes, and caraway seeds. Add just enough water to cover everything, add the vegetable powder and black pepper. Cook for about 20 minutes, until the potatoes are tender.

    Serve your paprikas krumpli hot. Enjoy!

    Slice and dice

    Peel the potatoes and dice them. Rinse well the tomato and the yellow sweet bell pepper. Dice the tomato, core, quarter, and dice the yellow sweet bell pepper. Remove the plastic wrap from the sausages and slice them into rounds. Finally, if you're using whole caraway seeds, grind them in a mortar.

    Cook the stew

    Heat the olive oil in a pot, add the garlic paste, paprika, and dried onion. Cook for a few seconds, paying attention that they don't burn, then add 1 cup of water and a little salt. Add the tomato, potatoes, sweet bell pepper, vegetable powder, and caraway seeds. Stir, and add just enough water to cover the content of the pot. Adjust with salt and pepper, and cook for 20 minutes over medium heat, until the potatoes are soft. Take off the heat.



    Transfer your paprikas krumpli to the serving bowls and enjoy while hot! Jó étvágyat!
